I'm sure that it's possible, but:
 
I cannot find out how to say that a field in a grid can have multiple values.
 
My need arises because I want to allow more than one tag to classify an item, e.g. students|teachers|administrators.
 
I guess that this must already be the case for WIKITags, but I can't see where the field property has been set for that field.

I'm not sure what exactly you're asking re Wikitags:
With WikiTags, multiple tags will work, but it's kind of messy...
 
You can create a drop-down list, which can be used when you only want one tag in the field being edited.
Where there are already tags in the field, they will be overwritten if you select a tag from the drop-down list.
So,
more than one tag will have to be added manually by typing the tag using the appropriate brackets.
 
Here are the field properties I have:
 
  
'Auto-list' should not be selected - otherwise every variation of multiple tags that you use will be added to the list - in my experience, this made the list unusable.
 
 
I use them for one limited thing - to categorise drawings.
(I did end up creating a wikitag grid where I made a list of the ones in use and added descriptions where necessary. I can also check 'style' e.g. is it cutaway or cut-away, etc).
