dont know - this could be a bug
 
With some grids/fields, typing in a cell that has focus goes automatically to edit mode (behaviour #1)
with others, typing in a cell that has focus moves the focus to a cell that starts with whatever you've typed (i.e. search as opposed to edit mode) (behaviour #2)
 
Now,
I've noticed that this can vary from grid to grid with the same field -
e.g. my field "BillingNumber" has behaviour #1 in one grid and bahaviour #2 in another
 
 
Is this a grid specific setting ? (or a bug?)
could it possibly be related to the setting which dictates whether typing adds text to cell or replaces text in cell (cant for the life of me find that setting anywhere...)

Yes this is a Grid setting: Auto-Search (CTRL-F3)

Edit > Overstrike or click on the OVR on the toolbar.
 
This setting applies to text  and date fields. Number fields are always in overstrike
 
note: should date fields always be in overstrike too? Comments welcomed here

What does "default" signify on the Field management dialog, compared with "start with" or "contains"? [node 68]

Default is defined in Tools > Options. This allows a quick change of the behaviour for all fields
