I have backed up my viking.SNDB using:
1. Manual backup, which creates a file viking.SNBKM. (This file is overwritten each time I create a manual backup)
and
2. Auto backup, which creates incrementally dates files like viking.20220724-1432.SNBKA.
A viking.ini file is also created in the backup folder.
How do I restore my backed up file? Do I simply rename the extension to SNDB?
What do I do with the viking.ini file?
p.s. I searched the help file for a book page with the word "restore" but I didn't find anything relevant.
How do I ?

This is a situation where you have to think "what exactly do I want?"
Are you sure you want to completely replace the file? Then (to be on the safe side) make a copy of the file you are going to replace (or simply move it). Replace it with the backup, changing the file type as appropriate.
I usually initially just want to look at the backup, so I would "restore" it elsewhere (adding backup date+time to the name if it's not there already). You've got to be careful here, because it will probably have the same backup settings as your current file and it could overwrite an important backup.
Best to look at the ini yourself to see what's going on there.
