I turned on the ability to see column sorting. I dragged two columns up there. Neat. Now how do I get it to go back to the unsorted mode?

Are you talking a bout the "sort bar" ?
 
Grid (menu) -> sort bar
 
And BTW pressing F5 will cancel any grid column sorting and revert to the filter sort box (right end of the source bar -- alt-s)

Is there a listing of key assignments somewhere?
 
I would have to say that some of these key choices are counter-intuitive. F4 is used traditionally to close windows. F5 is used to refresh. Since there is a need to refresh in SqlNotes, F5 is the key most people would look to first for refreshing. Oh well.
 
Er, so what is the key to refresh, if any, in InfoQube?

F5 is for refresh (like keith also said). I pointed out that F5 would remove your sortbar sorting because refresh will also have the effect of resetting the various UI sorting. The only sorting that's "permanent" is contained in the sort box (right end of sourcebar). (Some of this might change in the future.)
 
F4 is generally not used for closing windows, but  ALT-F4 (for main window) or CTRL-F4 (sub windows, and tabs, as it is now in InfoQube for tabs) are. I don't think that F4 is a problem... It's actually used to open panes in various application (ie : in firefox, it opens my sidebar).
 

As Armando said, F5 will work (Grid Refresh, which can also be accessed by the menu, or a refresh icon, etc).
 
Also it appears there may be other ways: from the old forum: "... The Sort Bar (Grid>SortBar) is used for quick sorting and is particularly useful for multi-column sorts.
Clicking on the # column will return to the default order as defined by the Sort textbox." 
 
It also looks like you can  drag the sort criteria off the sortbar.
