Would it be possible to have "end time" show at same time in the Date/Time selector. This would make it easier to enter start/end time. It would probably be complex as you can't be sure that end time is being used.

I'm not sure what you mean here.
Start Time & End Time are only fields which can be seen in:
1. field list (if created)
2. properties (after being created in field list)
3. columns after 1 & 2
From Main Menu, you can create fields by clicking View > Manage Fields > New
Time entry is neutral -- can be beginning, middle or end or any time inbetween
In a grid view you can add as many time columns as you want by drag / drop from properties pane onto grid view of your choice
so you could end up with something that looks like the following:
