I use highlighting (background color) a lot in the grids.  I prefer highlighting just the text, not the whole item row.
 
It appears that you can't set background color for dates.  Is that correct?

Item color can be applied to the whole item or to any specific set of columns (no restrictions). After you change it in Grid > Properties > Options. Enter a comma separated list of field names. You must close and re-open the grid.
 
Are you using conditional formats or just regular ItemColor field ?

I select the text, then apply the color using the item color tool in the toolbar.  This works for regular text but not dates, it seems. 
 
I haven't tried to digest what all you've suggested but that looks too complicated for easy use.

OK, I get it. Yes, only text fields support rich text formatting (bold, color, hyperlink, etc)
 
Item color is super easy. Right-click and select Item back color...

Yeah, I know how to do it.  I prefer highlighting individual text rather than the whole row.  In most cases, I don't want all the text highlighted: just the subject header.  I also think having the whole row highlighted looks garish and interferes with the clean look of alternate row colors to help differentiate between items.  All, of course, just my preference.

Yes, I understand. I have white rows, same as in Excel, so no alternate colors. I like that clean look.
Regarding cell colors, do checkout Grid > Properties > Options > Item Color applies to fields setting. That way, item color does not color the whole line, just specific columns (#, Item, any other). And using itemcolor allows you to search / filter per color
