If I right click on a column and choose alignment, the contents of the column defaults to center (if that is my choice). Under Field Properties, there is an option for alignment also. I assume this is not for alignment of the headers but rather for the columns. Yet while the columns are centered via the right click option, this is not reflected in Field Properties where the alignment remains left. If I am wrong and this option controls header alignment, then it does not work.

Not quite. Grid column headers are always left-aligned.
 
The field alignment property is used as the alignment when the field is shown in the Properties pane and as the default alignment in grids (when adding the field in a grid for example)

If I understand correctly, assigning center when creating a field in field properties will center the column (not header) in the grid and in the properties pane. It does not quite work well here. The property pane was centered, but returning to left alignment does nothing to the alignment in the property pane. Also, it appears to have no effect on column alignment.
 
Edit: Just to clarify, I am referring to check boxes. I see they are all center aligned in the properties panel (I normally keep it very normally, so I did not notice all these years!). Apparently this alignment is fixed, yet it can be changed in the columns.

In the Properties pane, yes/no fields are centered. Other fields are shown as per the Field Properties setting. I just checked and it works (left, center, right)
Changing the Field Properties alignment setting is only applied when a field is added to the grid. It is the default alignment setting for the grid. If the field is already in the grid, changing the field property will not change it. Use the header context menu to change the alignment
