I've assigned a shortcut to Back Color (item > back color), but it doesn't work. I checked in the "user.shortcut.tab" file and it's there. I've tried to reload the file, etc.

(Note that I've used this shortcut for years to highlight stuff in IQ)
 
I'Ve just discovered that there's some "confusion" between the colouring of the whole column/field (new feature) and just colouring a cell.
When I select a cell to just colour a single cell, and click on the desired colour, it colours the whole column.
This might be unrelated though.

Just color a cell ?? You mean embedded formatting or ItemColor with the grid set to show it on only one column ?

I should've said, "just coloring a single row".
To reproduce :
- Select a cell -- here it's the item field
- select a background color.
Now it colors the whole column/field instead of the row.

Solved/found the problem : seems that the button I had for backcolor was outdated - it didn't refer to the right "function". By removing it and resetting the toolbars, it now works as it should.
